Product Description

Vollum Brotform Proofing Basket

Note that "pounds" (lb) as used here refers not to the weight of the proofing basket but to the weight of the dough placed in the basket.

This basket is used BEFORE BAKING. Do NOT place in oven.

Material:
Rattan (also known as rattan cane), a natural wood-like fiber derived from the stems of certain palms; proofing basket is handmade and handwoven, unbleached, food-safe, eco-friendly material free of chemicals.

Structure:
Sturdy and durable but lightweight, with spiral shape that is kept intact by staples.

Purpose:
Wicking moisture from crust--prior to baking, not during baking--to make it flaky and crunchy once baked; giving baked loaf a pleasing old-fashioned look; and preparing dough before baking to have a superior taste and texture after baking.

Method of use:
Powder basket with generous amount of flour. Some bakers dust both the basket and the loaf with flour. (If using liner, flour the liner.) Flour keeps dough from sticking and helps the loaf rise up straight and be higher when baked. Put in basket your kneaded-dough loaf until it acquires the spiral shape of the basket. Remove loaf from basket. Place loaf--alone--in oven. (Some bakers, when removing loaf from basket prior to baking, sprinkle corn meal on the top of the risen loaf, then place a cookie sheet over the top of the basket, then invert the basket, give its bottom a couple of taps and lift it straight off the loaf.) Dust basket with flour before each use.

Care of proofing basket:
Let basket dry, then scrape or brush off sticky bits of dough. To ward off mold or bacteria, place basket in direct sunlight to dry.

  • Some bakers spray a light mist of olive oil and rub it in with a towel, but most advise against washing the basket (some--before the first use--spray with water and then dust with flour, let it set for 24 hours and then dust again before dropping in the dough); apply generous amount of flour to basket (some dust both the basket and the loaf) to keep dough from sticking and help the loaf rise up straight and be higher when baked; after using the basket and removing the bread, tap out loose flour
  • Let basket dry, remove sticky bits of dough by scraping them off or with a stiff dry brush; if concerned about mold or bacteria, place basket in direct sunlight or wait until oven is down to 150 degrees Fahrenheit and place in oven to dry; keep basket in bakery to use along with bread machines; proofing basket becomes more non-stick with use as a small amount of flour accumulates; proofing baskets are also known as banneton or brotform baskets and, unlike loaf pans, are used ONLY BEFORE baking
  • Basket wicks moisture from crust to make it flaky and crunchy; use proofing basket for proofing, banneton, or brotform baking methods or for everyday use, or as eye-pleasing serving basket for bread or rolls at mealtime; an easy and healthy way to bake artisan bread with superior texture and taste; before use, powder basket with flour (semolina and rice flour have been recommended over wheat flour for anti-adherence of dough to basket; alternatively, use blend of rice flour and unbleached flour)
